Bison and Greens Skillet

Ingredients
  • 2 Cups Chopped Broccoli
  • 2 Cups Chopped Asparagus
  • 2 Cups Torn Lacinato Kale
  • 1 Lb Ground Bison (Can sub ground beef or turkey if your prefer)
  • 1 Onion, Diced
  • 4 Cloves Garlic, Minced
  • 1 Cup Fresh Chopped Parsley
  • 1 Tbsp Oregano
  • 2 TBSP Ghee
  • 3-4 TBSP of Homemade Buffalo Sauce: Recipe Here
Instructions
  1. Melt ghee in skillet over medium heat
  2. Add onion and garlic and let cook for a few minutes, until onion is translucent
  3. Add ground bison (or other ground meat), broccoli, asparagus and parsley and cook for about 5-7 minutes or until meat is cooked all the way through.
  4. Add Kale and cook for another 2 minutes
  5. Remove from heat and serve. Drizzle with homemade buffalo sauce if desired.
